Red Pepper Parmesan Orzo

Serves: 4

Ingredients:
1 cup Orzo
1 can fat-free chicken broth
1 cup water
1 tablespoon I Can’t Believe It’s Not Butter
1/2 cup red pepper — diced
1/4 cup grated parmesan cheese

Instructions:
Melt butter in a sauce pan. Add pepper and saute until tender. Add orzo and cook for 1-2 minutes over medium heat. Add chicken broth and water and stir well. Bring to a boil, lower heat, cover and simmer for 15 minutes or until pasta is tender and most of the liquid is absorbed. Stir in cheese and serve hot.
