French Onion Soup

Ingredients:
6 cups onions — sliced thin
6 cups water
6 whole beef bouillon cubes
4 tablespoons I Can’t Believe It’s Not Butter
1/4 cup brown sugar
5 ounces french bread slices
5 ounces part skim milk mozzarella cheese
Instructions:
Melt butter in a large stock pot. Add onions and cook until transparent. Add brown sugar and mix well. Cook onions and sugar over medium heat for approximately 15-20 minutes, until onions are caramelized. Add water and bouillon cubes. Reduce heat, cover, and let simmer for 1 hour.
Ladle one cup into a crock bowl, top with 1/2 ounce bread and 1/2 ounce cheese and brown under a broiler.

This soup has a fantastic flavor!! My son, who has never like French Onion soup, even loved it!! I’ve made French Onion soup once before and, although it was tasty, I don’t think the flavor was as good as this!
