Beef Stroganoff
Serves: 8

Ingredients:
1 pound sirloin steak, trimmed — cut into strips
1 package mushroom — sliced
1 cup onion — chopped
2 cups beef broth
8 ounces light sour cream
1/4 cup ketchup
1/3 cup flour
ICBINB spray
Instructions:
Sautee mushrooms in a deep pot with ICBINB spray until brown. Remove mushrooms from pan.
Add beef strips to pan and brown.
Reserving 2/3 cup of beef broth, add remaining beef broth, ketchup, and onion to the beef and stir. Reduce heat to low, cover, and simmer for 2o minutes.
Whisk together the reserved to 2/3 cup of beef broth and the 1/3 cup of flour, until blended and stir into meat.
Add mushrooms and bring to a boil, stirring contantly.
Boil and stir one minute.
Add sour cream and heat through, adding salt and pepper to taste.
Serve over hot egg noodles.

Hi Gretchen,
I saw you on the Food Talk WW board; I’m croweli. This recipe looks great. I’m assuming that 1/8 of the recipe is one serving, and therefore 4 points? Do you have a serving size by the cup? (Like 1/2 cup of the recipe = 4 pts?)
