Cilantro Lime Salmon

Serves: 2
Ingredients:
10 ounces Salmon fillets
1 1/2 whole limes
4 tablespoons fresh cilantro
salt and pepper
Instructions:
Preheat oven to 350 degrees. Place salmon, skin side down, in a baking dish. Salt and pepper salmon to taste. Place cilantro on top of salmon and squirt the juice of the lime on top. Cook for 15-20 minutes, until salmon is cooked all the way through and flakes.

Per Serving: 180 Calories; 5g Fat (24.8% calories from fat); 29g Protein; 5g Carbohydrate; trace Dietary Fiber; 74mg Cholesterol; 97mg Sodium. Exchanges: 4 Lean Meat; 1/2 Fruit.

I tried this over the weekend and DH loved it. I think I put on too much Cilantro for my tastes, but I thought it tasted REALLY GOOD!
It will be a definite recipe in our household!

I liked this recipe, however, my boyfriend thought there was WAY TO MUCH lime. And I only used a little more than 1/2 of the lime. It also took longer for ours to cook than the directions state but I thought the salmon turned out great. If you like lime, you’ll like this~
